Quick and Easy Vegetable Stir Fry

This stir-fry is so healthy, easy and cooks in minutes. It’s a perfect recipe to improvise if you don’t have all the ingredients but best of all it tastes fantastic!

Serves 6

Ingredients:

1 tablespoon olive oil

1 red onion, sliced

2 garlic cloves, crushed

1 knob ginger, grated

2 carrots, diagonally sliced

½ Broccoli, cut into bit size florets

Broccoli stalk, sliced (picture below)

1 Red capsicum, sliced

1 baby Bok choy, stalk diced, leaves sliced

½ cup roasted cashews, sliced

¼ cup macadamias, diced

2 tablespoons sesame seeds

1 packet Udon noodles (picture below)

2 Tablespoons honey

4 Tablespoons Ketjap manis soy sauce

Udon Noodles

Method:

  1. In a large frying pan over medium heat, heat oil and toss in onion, garlic, ginger, broccoli stalks and Bok Choy stalks, stir-fry until softened then toss in carrot and capsicum. Stir fry for 5 minutes.

  2. In meantime boil a full kettle of water.

  3. In a separate bowl place udon noodles in and pour in boiling water. Let noodles soak in water for 10 minutes then drain, set aside.

  4. Add honey and soy sauce to stir-fry and mix through thoroughly, then toss in broccoli florets, bok choy leaves and nuts, mix again.

  5. Turn off heat and add cooked Udon noodles and sesame seeds, toss through until coated with soy and honey.

  6. Serve with a side salad. Enjoy!
