Gluten free Banana, Fig and Apple Pudding

With an abundance of over ripe bananas, uneaten green apples and figs from our brown turkey tree, I had to create a recipe quickly to use up these fruits before the fruit flies attacked them. In addition, by creating a pudding from these fruits the kids are more likely to eat this than the fruits itself.

Ingredients:

  • 2 overripe bananas, peeled

  • 2 fresh Figs, halved.

  • 2 Green apples, peeled, cored and chopped roughly

  • 2 Dates

  • ¾ cup almond flour

  • ¾ cup coconut flour

  • 1 tsp gluten free baking powder

  • Pinch of salt

  • 2 eggs

  • 1 tsp maple syrup

  • ¼ cup coconut oil

  • ¾ cup Plain Greek Yoghurt

  • Pinch of Cinnamon powder

Method:

1.     Preheat oven to 180 degrees Celsius and line a 20cm round baking pan or loaf pan, with grease proof paper, spray with oil then set aside.

2.     Place bananas, fig, apples and dates in a food processor and process until desired texture, then add eggs, maple syrup, coconut oil and yoghurt and process until combined thoroughly.

3.     Remove mixture from the food processor then place in a large bowl, fold in flours, salt and baking powder.

4.     Pour mixture into the prepared pan and sprinkle with cinnamon powder.

5.     And Bake in oven for 45 minutes or until cooked through

6.     Once cooked let pudding sit in the cooling pan for at least ½ hour before lifting out, this stops pudding from falling apart.

7.     Serve with custard or a dollop of ice-cream.
