Roasted pumpkin, haloumi, spinach and mushroom pizza

Who doesn’t love pizza! It’s comfort food at it’s best. And everyone has their favourites, from meat lovers to extra cheesy and maybe without pineapple.

This is my take on a ‘Fakeaway’ pizza, (Pizza that you make at home). You can put whatever you want on it. All you need to do is keep the base and the tomato sauce mixture the same. The rest is up to you… Enjoy……

Serves 6

Ingredients:

  • Pizza base fresh from Coles or Woolies

  • 400 grams tinned tomatoes

  • 1 tablespoon extra virgin olive oil

  • 100 grams pumpkin of your choice, peeled and chopped into bite size pieces

  • 1 red onion, sliced

  • 1 cup baby spinach

  • 125 grams haloumi, thickly sliced

  • 5 large button mushrooms, sliced thinly.

  • 2 cups mixed pizza cheese

Method:

  1. Preheat oven to 180 degrees Celsius, fan-forced and line two baking tray with baking paper, set aside

  2. Place pumpkin in a large bowl and drizzle with half the olive oil. Give the pumpkin a good tumble coating each surface with oil. Season with salt. Place pumpkin on 1 baking tray and spread out evenly.

  3. Bake in oven for 35 to 40 minutes or until pumpkin is caramelised and tender, then take out of oven, set aside.

  4. In the mean-time place tomatoes in a small saucepan and bring to the boil. Reduce heat and let simmer until liquid is slightly reduced and pulpy. Then turn off heat and set aside

  5. In a frying pan, fry onion in remaining olive oil until caramelised then add mushrooms. Cook until golden then remove mixture to a large bowl.

  6. Once again reheat frying pan and place haloumi on it. Cook haloumi until slightly golden on both sides, then take pan off heat and set aside.

  7. Pour tomato mixture over the pizza base and spread out evenly. Place pumpkin, onion and mushroom mixture on top and spread out evenly. Then arrange baby spinach and place haloumi on top. Take the pizza cheese and coat entire pizza with it. Bake in oven for 20 minutes or until cheese is melted, golden and base of pizza looks cooked.

  8. Serve ¼ pizza with a side salad and a drizzle of sweet chili sauce.
