Crunchy Buckwheat slice

This very crunchy chocolaty slice is not only gluten and dairy free but sugar free too. A little higher in calories than I usually aim for, however you will be able to stop at one. They are very filling and will keep you feeling full for longer, as of its slow release in energy. Great to have as a mid-morning or afternoon snack.

A little about Buckwheat.

Buckwheat is not a grain. However, it is known a pseudocereal. Pseudocereals are seeds that are eaten in the same way as a cereal grain, but they do not grow on grasses. Other common pseudocereals include quinoa and amaranth. Buckwheat is very nutritious being a low glycemic index (GI) and is a good source of fiber. Buckwheat has recently been investigated for its health benefits for people with Type 2 diabetes or high blood pressure.


Ingredients:

  • 2 cups desiccated coconut

  • 1 tablespoon cacao powder

  • 1/2 cup pepitas

  • 1/2 cup hemp seeds

  • 3/4 cup buckinis (Buckwheat kernels). Activated Buckinis are gluten free and are a rich source of protein, rutin and manganese.

  • 1/4 cup raw almonds

  • 1 cup arrowroot flour

  • 1 cup almond flour

  • 1 tablespoon almond butter/ or peanut butter

  • 1/3 cup water for slice.

  • 1/2 cup unrefined coconut oil

  • 2 eggs

Icing for slice:

  • 1/4 cup of water, for double boiler

  • 100 grams dark chocolate

Method:

  1. Preheat oven to 180 degrees Celsius and line a slice tin with baking paper, set aside.

  2. Place all ingredients into a food processor and process until well combined and starting to form a ball around the blade.

  3. Carefully tip mixture into the slice tin and using wet fingers spread mixture evenly. This should be easy to do as dough will be quite pliable.

  4. Bake in oven for 30 minutes or until golden and firm. Note: As the slice is baking, bubbles of oil may appear on the surface of the slice. This is o.k as it will settle down once cooled.

  5. Cool in tin for around 1/2 hour before slicing into 30 squares, set aside.

  6. In a double boiler, place a small amount of water in the bottom of a saucepan and bring water to the boil. In the mean-time place chocolate in a stainless steel or glass bowl, set aside.

  7. Switch off the heat, of the boiling water and gently place stainless steel bowl, containing the chocolate on top of the saucepan with simmering water. The steam of the water will melt the chocolate. If the water cools down too fast, take off the stainless steel bowl containing chocolate, and reheat the saucepan with water. Then follow method 7 again. Gently melt all chocolate. Once chocolate is melted thoroughly, spread over a cooled slice. You can use a fork to make patterns in the chocolate.
