Raw beetroot cake

This cake is not only delicious but beneficial for good health. The beetroot in this cake is full of vitamins and minerals and packed with powerful antioxidants. In addition, beetroots are an excellent source of folic acid and a very good source of fibre which influences favourable effects on bowel function. This assists in preventing constipation and may also help to lower cholesterol levels too. 

Makes 20 slices

Ingredients:

  • 1 cup raw almonds
  • ¼ cup raw Brazil nuts
  • ¾ cup raw macadamias
  • ½ cup raisins
  • ¼ cup agave syrup
  • 3 whole beetroots, peeled and finely grated
  • 8 pitted dates
  • 2 cups desiccated coconut
  • ½ cup carob powder
  • 2 tablespoons psyllium husks

Icing:

  • 100g cacao butter, melted and allowed to cool
  • 1 cup raw cashew nuts
  • ½ cup raw cacao powder
  • ½ cup maple syrup
  • 1 teaspoon lemon juice
  • 1 teaspoon ketjap manis

Method:

1.      In a 22cm spring form cake pan line with baking paper and set aside.

2.      In a large food processor grind the nuts in the ingredients list then set aside.

3.      In a large mixing bowl combine dates, raisins, and agave syrup with the ground nut mixture and the grated beetroots and mix thoroughly.

4.      Then add coconut, carob powder and the psyllium to the mixture and set back all ingredients in the food processor. Pulse the machine until all ingredients are well combined and finely textured.

5.      Spread the mixture over the base of the spring form pan and spread evenly. Set in freezer for around 20 minutes.

To make icing:

1.      In a food processor process cashews until finely ground. Then add the rest of the icing ingredients, Except for the cocao butter. Process until thoroughly combined.

2.      Pour in the melted cacao butter and continue processing until mixture is smooth and glossy.

3.      Dollop a spoon full of icing over cake and continue doing this until cake is covered. Spread icing evenly, then place back in freezer until set, allow up to an hour.
