Vanilla, Medjool balls of happiness

Looking for a little piece of sweet happiness to pop in your mouth with your favourite beverage. Why not try these vanilla Medjool balls? They are great to have with a cuppa or as a small treat after dinner. There's an added bonus, they're really simple and easy to make.

Ingredients:

  • 8 Medjool dates
  • 2 cups shredded coconut
  • 1 & ½ cups almond meal
  • 1 & ½ tablespoons honey
  • 1 Tablespoon vanilla extract
  • 1/3 cup coconut oil, melted
  • 3 Tablespoons water
  • ½ cup desiccated coconut, for dusting

Method:

  1. Place all ingredients, except the desiccated coconut, into a food processor and process until well combined and starting to form a ball around the blade.
  2. In the mean time in a small separate bowl place in desiccated coconut.
  3. Roll the sticky mixture into small balls and then roll into desiccated coconut coating evenly.
  4. Place vanilla, Medjool balls into an airtight container and store in fridge or freezer.
