Feeling Good Smoothie

A "Feeling Good Smoothie" that's sure to beat the winter blues and bring a bit of happiness to your day.

This smoothie's made with turmeric, mandarin, coconut water and milk.

Serves 4

Ingredients:

  • 1 cup rolled oats, finely processed
  • 3 cups coconut water
  • 1 cup almond and coconut milk
  • 4 fresh mandarins, skins removed, segmented and pips taken out.
  • 1 cm nob fresh turmeric
  • 1 cm nob fresh ginger
  • 1 teaspoon vanilla extract
  • 2 teaspoons honey
  • 3 tablespoons Maca powder
  • ¼ teaspoon freshly ground black pepper

Method:

1.      Place all ingredients in a blender or food processor and grind until smooth and fine.

2.      Pour thick liquid through a sieve into a jug and strain out pulp into another bowl with a lid.

3.      Set pulp aside. Pulp may be used as a further ingredient in a cake, pancake or muffin mixture. It is suitable for refrigeration or freezing.

4.      Enjoy smoothie!
