Golden Banana Bread

This golden banana bread not only looks good but smells amazing too! 

It's a nutritious mid morning or afternoon snack and also a great way to use up your over ripe bananas. Pack it for your picnic or in the lunch box, but nothing beats warm banana bread straight from the oven. It also tastes amazing with a dollop of plain yoghurt and a serve of fruit. Why not try some for yourself!

Golden Banana Bread

Serves 10

Ingredients:

  • Canola spray
  • 3/4 cup self raising flour, sifted
  • 3/4 cup plain wholemeal flour
  • 1/2 teaspoon baking soda, sifted
  • 1/2 cup caster sugar
  • 2 overripe bananas, mashed
  • 2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 egg, beaten
  • 3/4 cup Greek or Natural yoghurt
  • 1 tablespoon olive oil
  • 1 tablespoon pepitas
  • 1/4 cup raisins
  • 1/2 cup almonds/ walnuts chopped roughly
  • 1 teaspoon brown sugar

Method:

  1. Preheat oven to 200 degrees Celsius/ 175 fan-forced, then lightly spray a loaf pan with canola oil and set aside.
  2. Combine flours, baking soda, caster sugar and cinnamon in a medium size bowl and set aside.
  3. In another bowl mix bananas, yoghurt, vanilla extract, oil and egg. Mix together well and fold into flour mixture.Gently mix through raisins and chopped nuts then spread mixture into prepared tin and sprinkle top with brown sugar and pepita’s.
  4.  Bake in oven for 50 minutes or until golden brown and an inserted skewer comes out clean. Stand for 10 minutes in pan then turn out on a wire rack to cool.
  5. Serve warm with a touch of butter or at room temperature.
  6. This bread also freezes well in an air tight container up to 6 months.

Great as a lunch box treat!
